AB  - Considering the health-benefits of berry fruits consumption and increased market demands for food authenticity
as one of the most important quality assurances, phenolic profiling by high-performance thin layer chroma-
tography and ultra-high-performance liquid chromatography hyphenated with mass spectrometry was combined
with multivariate analysis for phytochemical characterization and intercultivar discrimination of cultivated
berry seeds. The phenolic profiles of 45 berry seeds from nine genuine Serbian cultivated fruit species (straw-
berry, raspberry, blackberry, black currant, blueberry, gooseberry, cape gooseberry, chokeberry, and goji berry)
revealed a good differentiation according to botanical origin. In order to determine biomarkers responsible for
the classification, a total of 103 phenolic compounds were identified, including 53 phenolic acids and their
derivatives, 26 flavonoids and 24 glycosides. Biomarkers derived from the phenolic profile of berry seeds proved
to be a powerful tool in the authentication of botanical origin, and may be useful in detection of frauds in berry-
based seed-containing product.

Silver distribution and binding mode as key determinants of the antimicrobial performance of iron oxide/silver nanocomposites

AB  - The emerging threat of bacterial resistance to antibiotics prompts the urgent search for biomaterials for the treatment of infectious disease. Here we report on the synthesis and characterization of a multiphasic nanocomposite comprising magnetic iron oxide and silver nanoparticles. The method of synthesis involved the combustion of a metalorganic complex and reduction of the silver ions that were exchanged and/or adsorbed on the surface of iron oxide. Different physical and chemical treatments coupled to the reduction process, including ultrasound and Lugol's iodine solution, respectively, homogenized the distribution of the silver nanoparticles on the iron oxide phase. Remarkably, using ascorbic acid as a reductant enhanced the magnetic properties of the material as a result of the reduction of the magnetic matrix alongside the silver cations. The treatment with ultrasound detached large amounts of silver from the iron oxide phase and resulted in the lowest amount of silver incorporated in the nanocomposite. Despite that, this treatment led to the highest antibacterial activity against both Gram-positive and Gram-negative strains, indicating that the homogeneity of the distribution of silver on the iron oxide matrix is a more important determinant of the antibacterial performance than the amount of silver incorporated in the material. At the same time, the treatment with Lugol's iodine equally increased the distribution homogeneity, but induced excessive ion exchange and crystal lattice substitutions, thereby adversely affecting the antibacterial performance. This has indicated that the mode of binding silver to iron oxide can compensate for the positive effects of homogeneous distribution with respect to the antibacterial performance.

AB  - Abstract: Nickel ferrite nanoparticles were synthesized via thermal decomposition of β-diketonato complexes of nickel(II) and iron(III). The mechano-chemical activation of the complex precursors was used to ensure the increase in the reaction activity and consequently reduce thermal decomposition temperature. The prepared sample was thoroughly characterized by X-ray powder diffraction, FT-IR spectroscopy, scanning electron microscopy (SEM) coupled with electron dispersive spectroscopy (EDS), and transmission electron microscopy (TEM). X-ray powder diffraction and FT-IR confirmed the spinel phase of the investigated powder. SEM and TEM revealed the ultrafine nature of nanosized polygonal particles, with a pronounced agglomeration effect. The capacity for electrocatalytic applications was examined using cyclic voltammetry (CV) and electrical impedance spectroscopy (EIS). Electrocatalytic measurements pointed out that the addition of 5% of nickel ferrite as a modifier to carbon paste electrode caused a current increase and a decrease of the EIS semicircle. Further increase in the amount of the modifier decreased heterogeneity of the electrode surface and served as excellent sensor for the detection of gallic acid in the concentration range from 1 to 10 µM with the detection limit of 0.27 µM. This unambiguously indicated the significant improvement in electrode transfer rate and better characteristics of the diffusion layer. © 2022, Pleiades Publishing, Ltd.

AB  - The effect of Ca2+ amount and sintering temperature on mechanical properties of
geopolymer-brushite (GPB) binders was investigated. Brushite and raw abandoned kaolinite
clay thermally transformed into metakaolin were used for GPB synthesis. The complete phase
and structural analyses were performed by X-ray powder diffraction, and Fourier transforms
infrared spectroscopy (FT-IR). The pore-filling effect as a consequence of Ca2+ ions
incorporation into the hybrid geopolymer networks improved the compressive strength. On
the other hand, the chosen biscuit sintering at 800 and 900o
C caused the phase

AB  - The current study aimed to phytochemically characterize (including a detailed phenolic profile) two endemic Balkan's species (Hieracium waldsteinii and Onosma stellulata) and determine their possible application as a source of natural antioxidant and antimicrobial agents. The main phenolic compound in both species (in all examined parts) was chlorogenic acid. Eriodictyol, genistein and naringenin were quantified only in H. waldsteinii while isorhamnetin-3-O-rutinoside and sinapic acid were characteristic for O. stellulata. The highest antioxidant activity (98 mg AAE/g dry weight for TAC assay) was ascribed to the flower extract of H. waldsteinii while the lowest results (∼4.3 mg AAE/g dry weight for FRP assay) were exhibited by the extracts obtained from the plant's stem. Antimicrobial assays showed moderate antibacterial, i. e., moderate/strong activity against several tested fungi (in particular Trichoderma viride). Correlation analysis revealed strong positive connection between phenolic compounds and reducing power of extracts as well as between total phenolic and flavonoid content and the obtained minimal inhibitory concentration recorded in antibacterial assays.

AB  - Domesticated international (standard) apple cultivars, together with resistant apple cultivars are the core of the Serbian apple production. Furthermore, autochthonous cultivars are characterized by a good adaptability to the local environmental conditions and represent a valuable source of genetic variability, as well as an important source of the gene pool for further breeding programs. Additionally, they show a higher phenolic content and a stronger antioxidant activity, in comparison to commercial cultivars. Therefore, they are more likely to be used as a functional food. The subjects of this study were seventeen samples of fruits and leaves from autochthonous apple cultivars, five international standard cultivars, and six resistant apple cultivars. The phenolic profile was determined using ultra-high performance liquid chromatography (UHPLC), coupled with a diode array detector and a TSQ Quantum Access Max triple-quadrupole mass spectrometer. A total of twenty compounds were quantified in the samples. Most of the analyzed phenolics were detected in higher amounts in the peel, compared to the mesocarp. The results of the multivariate analysis of variance (MANOVA) indicate that 5-O-caffeoylquinic acid is present in the highest amount in the mesocarp, while in the peel and leaves, quercetin-glycosides were detected in the highest amount. According to the MANOVA: phloretin, phlorizin, 5-O-caffeoylquinic acid, kaempferol, and p-coumaric acid are present in significantly higher levels in the autochthonous cultivars, compared to the standard and resistant ones (in both fruits and leaves). Therefore, these compounds can be used as chemical tracers of the apple varietal origin.

AB  - Product authentication is one of the most important food quality assurances. Considering the importance of
consumption of berry fruits with proven health-beneficial properties, high sensory values and rich composition in
bioactive substances, the aim of this study was to evaluate a straightforward and simple procedure for the protein
fingerprinting of berry seeds. For this purpose, protein profiles of 45 samples of genuine berry fruit cultivars
(strawberry, raspberry, blackberry, black currant, blueberry, gooseberry, chokeberry, cape gooseberry, and
gojiberry) were analyzed by SDS-PAGE electrophoresis in combination with advanced chemometric tools. The
most important parameters for discrimination among berry seeds were polypeptides at 12.8; 15.1; 25.0; 26.4;
30.0; 41.8; 44.4; 46.0; 48.5; 52.3 and 56.4 kDa. Biomarkers obtained from the protein profile of berry seeds
proved to be a powerful tool in the authentication of their botanical origin, as well as for potential detection of
berry-based products adulteration

Late ripening cultivars had higher contents of all chemical compounds. The berries on 2-year-old shoots had total phenolics that ranged between 123.0 (‘Titania’) and 298.3 mg/100 g fresh weight (FW) (‘Ometa’), while total antho-cyanins ranged between 398.5 (’Ojebyn’) and 1160.8 mg/kg FW (’Ometa’). According to the obtained results, cultivars ‘Ometa’, ‘Ben Lomond’, ‘Tsema’ and ‘Malling Juel’ can be recommended as the most promising for growing in the continental climate because they stood out with higher generative potential and yield, physical traits of cluster and berry, higher level of primary and secondary metabolites and DPPH activity in their berries.

AB  - The aim of this study was to compare total phenolic content (TPC), radical-scavenging activity (RSA), total anthocyanin content (TAC), sugar and polyphenolic profiles of two apple cultivars (‘Discovery’ and ‘Red Aroma Orelind’) from organic and integrated production systems in climatic conditions of Western Norway. Sixteen sugars and four sugar alcohols and 19 polyphenols were found in the peel, but less polyphenols were detected in the pulp. The peel of both apples and in both production systems had significantly higher TPC and RSA than the pulp. The peel from integrated apples had higher TPC than the peel from organic apples, while organic apples had higher TAC than the integrated. Sucrose and glucose levels were higher in organic apples; fructose was cultivar dependent while minor sugars were higher in integrated fruits. The most abundant polyphenolic compound in the peel of the tested cultivars was quercetin 3-O-galactoside, while chlorogenic acid was most abundant in the pulp. Regarding polyphenols, phloretin, phloridzin, protocatechuic acid, baicalein and naringenin were higher in organic apple, while quercetin 3-O-galactoside, kaempferol 3-O-glucoside, chlorogenic acid and syringic acid was higher in integrated fruits. In conclusion, organic ‘Discovery’ and integrated ‘Red Aroma Orelind’ had higher bioavailability of health related compounds from the peel and the pulp.

Considering that Norway is a country with specific climatic conditions, as well as has a limited period of fruit vegetation, another important goal of this study was also to compare raspberries from different Norwegian areas, as well as different grown cultivars. Modern analytical techniques, such as high-performance anion-exchange liquid chromatography with pulsed amperometric detection (HPEAC-PAD), ultra-high-performance liquid chromatography with diode array detector coupled to triple quadrupole mass spectrometry (UHPLC-DAD MS/MS), and inductively coupled plasma–optical emission spectrometry (ICP-OES), provided a detailed examination of the raspberry extract samples. Based on their high levels of minerals (especially N, P, and K), organic acids (predominantly citric and malic acids), sugars (glucose, fructose, sucrose, and galactose), and polyphenols (ellagic acid, syringic acid, quercetin, and rutin), Norwegian raspberries could be considered fruits with increased health-beneficial compounds. AB  - Research background. Considering the importance of consumption of berry fruits with
proven health-beneficial properties and difficulties in quality control of products of specific botanical and geographic origin, a fingerprint method was developed, based on advanced data analysis (pattern recognition, classification), in order to relate the variability
of nutrients in the selected cultivars to primary metabolite profile.
Experimental approach. Forty-five samples of genuine berry fruit cultivars (strawberry,
raspberry, blackberry, black currant, blueberry, gooseberry, chokeberry, cape gooseberry
and goji berry) were characterized according to chromatographic profiles of primary metabolites (sugars, lipids and fatty acids) obtained by three chromatographic techniques
(high-performance thin-layer chromatography, gas chromatography coupled to mass
spectrometry, and high-performance anion-exchange chromatography with pulsed amperometric detection).
Results and conclusions. Comprehensive analysis allowed monitoring and identification
of metabolites belonging to polar lipids, mono-, di- and triacylglycerols, free fatty acids,
free sterols, sterol esters, mono- to heptasaccharides and sugar alcohols. Chemical fingerprint of berry seeds showed the uniformity of primary metabolites within each fruit species, but revealed differences depending on the botanical origin. All three chromatographic methods provided a discriminative, informative and predictive metabolomics
methodology, which proved to be useful for chemotaxonomic classification.
Novelty and scientific contribution. A novel methodology for the identification of bioactive compounds from primary metabolites of natural products was described. The proposed untargeted metabolite profiling approach could be used in the future as a routine
method for tracing of novel bioactive compounds. The knowledge of metabolite composition obtained in this study can provide a better assessment of genotypic and phenotypic differences between berry fruit species and varieties, and could contribute to the development of new breeding programs.

The analyses of rutin and quercetin content in honey were performed by high-performance liquid chromatography (HPLC) with ultraviolet (UV) detection. The content of rutin and quercetin in the flower was also determined to check the quality of the herbal drug used, as well as to evaluate the effectiveness of the extraction.ResultsThe extraction of rutin and quercetin, in a honey sample using 10% of the Sophora flower, stored at room temperature, for 40 days, was the most intense one (150.24 mg/kg of rutin and 1338.93 mg/kg of quercetin). Sophora flower corresponds to the pharmacopoeia requirements for the quality of an herbal drug. The concentrations of rutin and quercetin in acacia honey were 0.08 and 0.14 mg/kg, respectively. The concentration of rutin in honey from the melliferous pasture of the Sophora flower was 0.40 mg/kg, while quercetin was below the detection limit (0.1 mg/kg).ConclusionsHoney, enriched with rutin and quercetin from Sophora flower, had sensory acceptability and pleasant taste and aroma.

AB  - This study presents a detailed characterization of 27 honey samples from the Tara Mountain region in Serbia using different comprehensive techniques and methods. The types of the honey samples were defined as monofloral (4 samples), honeydew (5 samples) and polyfloral (18 samples) honey based on determined polyphenol content, antioxidant activity, electrical conductivity and melissopalynological analyses. Physicochemical parameters such as pH (4.13–4.94), diastase activity (24.20–41.70 DN), acidity (14.60–29.70 meq/kg), content of 5-(hydroxymethyl)furfural (in range below 5, up to 16.90 mg/kg), sucrose (0.20–3.90 g/100 g), and moisture content (15.01–19.23%) confirmed the required quality of the honey samples. Sensory analysis revealed honey characteristics favorable to consumers. Analyses of 19 phenolic compounds using ultra-high-performance liquid chromatography with a diode-array detection and triple quadrupole mass spectrometry (UHPLC-DAD-MS/MS) revealed six phenolic acids and 13 other compounds from the group of flavonoids and their glycosides. In all the samples the highest content was determined for p-coumaric acid, followed by caffeic acid and pinocembrin. Besides total phenolic content and radical scavenging activity, antimicrobial activity was also examined. Most honey samples showed bactericidal activity against Staphylococcus aureus and bacteriostatic activity against Escherichia coli, while none of the honey samples inhibited the growth of Candida albicans. Chemometric analyses were applied for an in-depth study of the results to further evaluate the characteristics of the honey samples studied. Principal component analysis (PCA) was used for assessing the differences in physicochemical parameters, polyphenols content and antioxidant capacity between honey samples. The unrooted cluster tree was used to group the samples based on the melissopalynological analyses.

AB  - This study deals with the evaluation of the bioaccessibility and antioxidant properties of phenolic compounds from heat-treated skim goat-milk powder fortified with grape-pomace-seed extract, after in vitro gastrointestinal digestion. Ultra-high performance liquid chromatography coupled to diode array detection and mass spectrometry (UHPLC-DAD MS/MS) analysis confirmed the abundant presence of phenolic acids and flavan-3-ols in the grape-pomace-seed extract (SE) and heat-treated skim goat-milk/seed-extract powder (TME). After in vitro digestion of TME powder and recovery of total quantified phenolics, flavan-3-ols and phenolic acids were 18.11%, 24.54%, and 1.17%, respectively. Low recovery of grape-pomace-seed phenolics indicated strong milk protein–phenolic interactions. Electrophoretic analysis of a soluble fraction of digested heat-treated skim goat milk (TM) and TME samples showed the absence of bands originating from milk proteins, indicating their hydrolysis during in vitro gastrointestinal digestion. The digested TME sample had better antioxidant properties in comparison to the digested TM sample (except for the ferrous ion-chelating capacity, FCC), due to the presence of bioaccessible phenolics. Taking into account the contribution of the digestive cocktail, digested TME sample had lower values of total phenolic content (TPC), in vitro phosphomolybdenum reducing capacity (TAC) and ferric reducing power (FRP), compared to the undigested TME sample. These results could be attributed to low recovery of phenolic compounds. TME powder could be a good carrier of phenolics to the colon; thus, TME powder could be a promising ingredient in the formulation of functional food.

Mineral and nutritional assessments of soybean, buckwheat, spelt, and maize grains grown conventionally and organically

AB  - The present work determined complete mineral profile of four different types of grains 
(spelt, soybean, maize, and buckwheat) grown under two growing systems – conventional 
and organic. The contents of 20 macro-, micro- and trace elements were analysed in the 
examined grains by inductively coupled plasma-optical emission spectrometry (ICP-OES). 
In most samples, nine elements were present in concentrations higher than 10 mg/kg. The 
remaining elements were present at lower concentrations or in traces or not detected in 
certain samples. Aluminium and arsenic, as two toxic elements, were detected only in 
organic buckwheat grains. Based on the obtained results for the mineral contents, a nutritive 
assessment of the quality of grains of spelt, soybean, maize, and buckwheat were made.
Results of nutritional assessment showed that spelt, soybean, and buckwheat grains could 
potentially be good sources of several minerals for human diet. On the other hand, the 
presence of some toxic elements, such as cadmium and strontium, should be monitored. 
Results of principal component analysis (PCA) and hierarchical cluster analysis (HCA) 
shown that the mineral composition, to a much greater extent, depended on the botanical 
origin of grains as compared to the production system.

AB  - Earth-abundant, cheap and non-toxic zinc-based coordination compounds are drawing research attention as promising candidates for various applications, such as photoluminescent materials and anticancer agents. In this paper we report six zinc complexes (1–3-NO3 and 1–3-Cl) with pyridyl-based thiazolyl–hydrazone ligands, which differ in the nature of substituents at the ligands' periphery, anion type, and geometry around the metal ion. The complexes were characterized by single-crystal and powder X-ray diffraction analysis, as well as IR and NMR spectroscopy. The symmetrical complexes 2-Cl and 3-Cl, where zinc atoms are located at a two-fold axis, do not exhibit photophysical properties, unlike their asymmetrical analogs 2-NO3 and 3-NO3 with the same complex cation. Asymmetrical pentacoordinated 1-Cl and hexacoordinated 1-NO3 complexes exhibit photophysical properties. An admixture of allowed intra-ligand (1IL) and chloro (X)-to-ligand charge-transfer (1XLCT) electronic transitions is responsible for the fluorescence of the 1-Cl complex. The origin of the emission of the 1-NO3 complex is ascribed to an admixture of 3IL and ligand-to-ligand charge-transfer (3LLCT) forbidden electronic transitions, while for 3-NO3 most electronic excitations are of LLCT character. The thermal stability of the complexes is in accord with the strength of respective intermolecular interactions. The antiproliferative activity of the complexes was in the nanomolar range on some of the investigated cancer cell lines. Contrary to the increase of antiproliferative activity of the complexes in comparison to the free ligands in cancer cell lines, an acute toxicity determined in the brine shrimp assay follows the opposite trend. The overall results suggest that Zn(II) thiazoyl–hydrazone complexes have considerable potential as multifunctional materials.

AB  - The biological activity of Cd compounds has been investigated scarce since Cd has been recognized as a human carcinogen. However, the toxicity of cadmium is comparable to the toxicity of noble metals such as Pt and Pd. The paradigm of metal toxicity has been challenged suggesting that metal toxicity is not a constant property, yet it depends on many factors like the presence of appropriate ligands. Studies on anticancer activity of cadmium complexes showed that the complexation of various ligands resulted in complexes that showed better activities than approved drugs. In the present study, cadmium complexes with biologically potent thiazolyl/selenazoyl-hydrazone ligands have been prepared, and tested for their activity against different types of tumor cell models. The complexation of ligands with Cd(II) resulted in a synergistic effect. The antiproliferative activity study revealed that all complexes are more active compared to 5-fluorouracil and cisplatin. The mechanism of tumor cell growth inhibition reveal that selenium-based compounds induce cell death in T-47D (gland carcinoma) cells through apoptosis via caspase-3/7 activation. Additionally, their pro-apoptotic effect was stronger compared to etoposide and cisplatin. Nuclease activity, detected by gel electrophoresis, may be the possible mechanism of anticancer action of investigated complexes.

The effect of 1-pentadecene on Tribolium castaneum behaviour: Repellent or attractant?

AB  - BACKGROUND Movement of the red flour beetle, Tribolium castaneum (Herbst) (Coleoptera: Tenebrionidae), in stored products is mediated by food volatiles and other semiochemicals. RESULTS In two-way olfactometer assays, T. castaneum was more attracted to wheat bran previously infested with conspecifics than to uninfested bran. Chemical analysis showed that 1-pentadecene was present in the headspace of T. castaneum-infested wheat bran, but not detectable in the headspace of uninfested bran. An olfactometer was used to test the effect on T. castaneum behaviour of 1-pentadecene, and of volatiles from wheat bran with and without 1-pentadecene. The lowest concentration of 1-pentadecene exhibited an attractive effect, compared to the control (n-hexane). Slightly higher concentrations showed a neutral effect, while the highest concentrations repelled T. castaneum. Wheat bran with a low 1-pentadecene concentration was more attractive than wheat bran alone, whereas higher concentrations of 1-pentadecene were repellent. CONCLUSION The results provide important information on intraspecific, semiochemical-mediated behaviour in T. castaneum, which could potentially be used to develop new methods to monitor the flour beetles in stored products.

Ligand binding to fibrinogen influences its structure and function

AB  - Fibrinogen is a plasma protein that is highly susceptible to oxidation. Because of this chemical modification, fibrinogen acquires thrombogenic characteristics under different pathophysiological conditions. Increased carbonyl content and reduced porosity impair the degradation of formed fibrin mediated by plasmin. Fibrinogen is capable of interacting with many proteins, ions, and small molecules. These interactions can modify the functions of this protein. The discovery of new binding partners that may protect fibrinogen from harmful oxidation and, thus, preserve its normal function is essential. Some of the newly detected interactions between fibrinogen and small, natural bioactive molecules, together with the influence of these interactions on the structure and function of fibrinogen, will be presented in this text.

abstract = "Fibrinogen is a plasma protein that is highly susceptible to oxidation. Because of this chemical modification, fibrinogen acquires thrombogenic characteristics under different pathophysiological conditions. Increased carbonyl content and reduced porosity impair the degradation of formed fibrin mediated by plasmin. Fibrinogen is capable of interacting with many proteins, ions, and small molecules. These interactions can modify the functions of this protein. The discovery of new binding partners that may protect fibrinogen from harmful oxidation and, thus, preserve its normal function is essential. Some of the newly detected interactions between fibrinogen and small, natural bioactive molecules, together with the influence of these interactions on the structure and function of fibrinogen, will be presented in this text.",

AB  - This work investigates the release of toxic elements from wood into the experimental spirit models and the safety risks for consumers. The spirit models were prepared as ethanolic extracts using the procedure which reproduces maturation of spirits. Investigation included staves of wood species commonly used in Balkan cooperage: mulberry, Myrobalan plum, black locust, wild cherry, and various oaks. Potassium was the most abundant element, except in the wild cherry extract where calcium was dominant, and the Myrobalan plum extract where phosphorus was the most abundant. The parameters for the health risk assessment, such as hazard index (HI) and hazard quotient (HQ) were calculated for potentially toxic elements and indicated that all wood extracts would be safe for human consumption. Owing to the proven abundance of phenolics in the investigated wood extracts, relations among elements and phenolics were also studied and conclusions were made based on the statistically significant correlations.

AB  - The aim of research was to determine polyphenols bioaccessibility and antioxidant properties of thermally-treated skimmed goat milk enriched with sunflower bee-collected pollen through in vitro digestion. HPLC analysis confirmed that pollen-enriched milk contained flavonols as the main phenolic fraction (80.7–76.2%) followed by phenolic acids (14.2–17.4%). Among individual compounds quercetin-3-O-glucoside (155.1–197.2 μg/L) and p-coumaric acid (29.5–30.7 μg/L) were the main quantified flavonols and phenolic acids, respectively. After digestion of milk/pollen sample, total polyphenols recovery was 30.71% with higher phenolic acids recovery (40.1%) compared to flavonols (28.3%) indicating strong interactions between caprine milk casein micelles and pollen polyphenols. Applied antioxidant assays (phosphomolybdenum, ABTS•+scavenging activity and ferrous-ion-chelating capacity) have confirmed complexity of prepared product- it had high ability to quench ABTS•+ radicals and to form chelating complexes with Fe2+ ions. Digestion provoked 20% reduction in total antioxidant capacity compared to the initial sample. TTSG milk/pollen powder could be good functional ingredient. © 2021 Elsevier Ltd
